Citrus Salad

SERVES 4 TO 6 PEOPLE

Ingredients:

  • 1 small fennel, thinly sliced
  • 2 carrots, finely julienned
  • 2 small Lebanese cucumbers, thinly sliced
  • 4 oranges
  • Zest of half a lemon
  • 2 tablespoons (20 g) chopped capers
  • 4 tablespoons (60 ml) olive oil
  • Salt and pepper

Preparation:

  1. Divide the oranges into segments, taking care to retain as much of the juice as possible. Set aside.
  2. Place all sliced vegetables and the orange segments in a bowl.
  3. In another small bowl, mix orange juice with capers, lemon zest and olive oil. Whisk all.
  4. Add dressing to salad and mix well.
