summer is the time for keeping things casual and simplified. It’s the season of al fresco dining, family get togethers and relaxed dinners with friends. What better way to keep things simple than to prepare a meal on the grill? It’s the season’s ideal form of cooking. Nothing whets the appetite more than the enticing aromas of a barbecue hard at work. This summer take your barbecue skills to new heights with these four flavour-packed meals – really delicious, yet easy to pull together. They’ve been paired with a variety of unique beer styles (see page 78) that showcase what great beer is all about. So get your tongs out, pour yourself a beer and enjoy this wonderful time of year.

INGREDIENTS:

For steak:

•1 1⁄2 lb flank steak

•2 tsp smoked paprika

•2 tsp ground cumin

•2 tbsp jalapeño pepper, seeded 
and finely diced

•2 cloves garlic, finely chopped

•1 tbsp lime juice

•1 tbsp olive oil

For Lime Mayonnaise:

•2 tsp lime juice

•1 tsp lime zest, finely grated

•1⁄3 cup mayonnaise

•1⁄2 tsp Worcestershire sauce

DIRECTIONS:

1. Using a fork, pierce the steak repeatedly to allow marinade to penetrate. 

2. In a large plastic freezer bag mix together the smoked paprika, cumin, jalapeño pepper, garlic, lime juice and oil. Add steak to bag, coat and seal. Let marinate at least three hours, up to 12.

3. Stir together all ingredients for lime mayonnaise; set aside until ready to serve.

4. Heat an oiled grill to medium-high; remove steaks from marinade and season generously with salt.

5. Sear steaks about five to eight minutes on each side for medium-rare, time will vary depending on thickness of meat. Remove from grill, cover and let rest for five minutes. Slice meat about half an inch thick, slicing across the grain. Serve each portion with a dollop of lime mayonnaise.
