8-10 carrots, scrubbed
1 tbsp olive oil
Scant ¼ cup honey
Several sprigs fresh thyme, divided in two batches
Preheat oven to 400°F
Scrub carrots and depending on size, slice in half lengthwise.
Drizzle with olive oil and roast for about 10 minutes.
Drizzle with honey, gently toss with half the thyme and roast for another 10 minutes.
When carrots are barely fork tender, remove from heat, discard roasted thyme and replace with fresh for presentation.
