Key Lime Tarts–your Monday

This week’s recipe is compliments of Rawlicious, one of many amazing places participating in Veggielicious.

Makes: 12 tarts

Freshness: 2 to 3 days

 

The bright green colour of these tarts alludes to the pop of flavour you get from the first bite! This dessert is creamy & sweet—a perfect picnic treat.

Crust:

1 cup almonds (soaked for 12 hours)

2 cup shredded coconut

1/3 cup coconut oil

pinch sea salt

 

Filling:

1/2 cup lime juice

2 avocados

1/3 cup agave

1/3 cup coconut oil

1 teaspoon psyllium

1/4 teaspoon vanilla extract

pinch sea salt

 

Directions:

  1. Process the almonds in the food processor until chopped.
  2. Add the coconut, coconut oil & salt and combine.
  3. Press into three-inch tart shells.
  4. Blend the other ingredients in a blender except the psyllium and coconut oil.
  5. Once smooth, add the psyllium and oil and blend.
  6. Pour over crust and set in fridge for 1 hour or so.
  7. Decorate with shredded coconut and a slice of lime.
