Mango Caprese Salad
Serves two
Ingredients:
- 1 mango
- 2 large balls of boconcini cheese
- 45 ml (3 tbsp) olive oil
- Fresh mint chopped to taste
- Salt and pepper
- Slice mango. Slice bocconcini cheese. Chop mint and add to olive oil. Season with desired amount of salt and pepper.
On a plate, stack slices of mango and bocconcini cheese, alternating between each.
Drizzle dressing on top, garnish with mint sprig and serve.
