Mango Caprese Salad

Serves two

Ingredients:

  • 1 mango
  • 2 large balls of boconcini cheese
  • 45 ml (3 tbsp) olive oil
  • Fresh mint chopped to taste
  • Salt and pepper
  • Slice mango. Slice bocconcini cheese. Chop mint and add to olive oil. Season with desired amount of salt and pepper.

On a plate, stack slices of mango and bocconcini cheese, alternating between each.

Drizzle dressing on top, garnish with mint sprig and serve.
