Meatball Pho: Faster than takeout

2 scallions, chopped
1 tbsp grated ginger
3 cups chicken stock
1 generous handful cooked rice noodles
1 generous handful spinach

1. Brown meatballs with two chopped scallions.
2. Add grated ginger and chicken stock and simmer.
3. Add cooked rice noodles and spinach.
