Melon Soup

Makes 4 to 6 servings

Ingredients:

  • 2½ kg (6 pounds) mixed melons
  • 470 ml (2 cups) orange juice
  • 30 ml (2 tablespoons) fresh lime juice
  • 1 sprig fresh dill

Preparation:

  1. Slice melons in half and scoop out seeds, then cut fruit out of its rind and place in a food processor or blender.
  2. Add the orange and lime juice and puree until smooth.
  3. Garnish with fresh dill.
