Puff pastry pizza–your meatless Monday recipe

1 box of frozen puff pastry sheets (they come with two per box)
olive oil
fresh basil
8 plum tomatoes, sliced
1 onion, julienned
4 cloves of garlic, sliced
1 cup of pitted kalamata and green olives
8 oz fresh mozzarella cheese, sliced
Salt and pepper

Preheat the oven to 400 degrees Fahrenheit

Heat a tablespoon of olive oil in a skillet over medium heat. Add the onions and cook for 2-3 minutes, then add the garlic and cook until tender.

Line two baking trays with parchment paper. Put one sheet of puff pastry on each tray. Stretch the puff pastry out a little bit, making sure not to tear it.

Brush lightly with olive oil and layer the toppings evenly across the two sheets of dough.

Season with salt and pepper.

Bake for 20-25 minutes, or until dough is golden.

Cool for five minutes and sprinkle fresh basil leaves over each. Cut each pizza into the desired sizes and serve warm.
