Triple Kale Crunch Salad

FOR THE SALAD

Ingredients:

  • 1 bunch red kale
  • 1 bunch green kale
  • 1 bunch black kale
  • 1 cup (240 ml) pomegranate seeds
  • 1/2 cup (118 ml) hemp seeds

FOR THE DRESSING

Ingredients:

  • 1/3 cup (80 ml) lemon juice
  • 1/3 cup (80 ml) apple cider vinegar
  • 1/3 cup (80 ml) hemp oil
  • 1/3 cup (80 ml) agave syrup

Preparation:

  1. Remove stems from kale, and wash and dry, then cut or tear into bite-size pieces.
  2. Combine dressing ingredients and add enoughto kale to moisten.
  3. Massage dressing into kale to break down.
  4. Top with hemp seeds and pomegranate seeds.
