Looking for a healthy snack the whole family will love? Try this cool take on fries.
Ingredients:
- 1 bunch of asparagus
- 3 tbsp. extra virgin olive oil
- Kosher salt
- ¾ cup freshly grated Parmesan cheese
Directions:
- Preheat oven to 425 degrees Fahrenheit.
- Trim the asparagus ends where the spears naturally snap, and toss the spears with the olive oil and a sprinkling of salt.
- Arrange the asparagus in a single layer on a baking sheet and roast for 20 to 30 minutes until crisp around the edges. Once the asparagus has reached a crispy brown, remove from the oven.
- While the asparagus roasts, grate or sprinkle the Parmesan cheese onto a tray. Roll the warm spears in the cheese, gently shake off the excess, and lay the asparagus on a clean platter. Allow the cheesy spears to rest briefly so the Parmesan adheres, about five minutes.
- Gather small handfuls and place in parchment paper cones for festive serving.
