Banana Bread Pudding

(SERVES 10-12)
1 loaf, day-old bread (artisanal preferably) approximately 3 pounds (1.36 kg)
8 whole eggs
32 fluid ounces (1 litre) whole milk
1 ½ cups (192 g) white granulated sugar
1 teaspoon (5 ml) ground cinnamon
2 teaspoon (10 ml) vanilla extract
4 tablespoon (60 ml) butter (melted)
4 ripe bananas

1. Slice bread into 1 inch (2.5 cm) cubes, set aside
2. In a separate bowl add and mix: eggs, milk, sugar, cinnamon, vanilla extract, melted butter and bananas.
3. Combine the sliced bread and wet mixture, and refrigerate for
1 hour (overnight preferably).
4. Place the finished mixture into a container for baking.
5. Bake at 350˚F (176˚C) for 45 minutes, checking every 15 minutes for doneness. A knife or skewer will easily slide in and out without residue.
6. Serve warm.
