Banana-Turmeric Cake with Orange Icing

Serves: 8-10

INGREDIENTS:

  • 2 tsp. fresh lemon juice
  • 2⁄3 cup milk
  • 2 tbsp. yogurt
  • 2 eggs
  • 2 tsp. vanilla extract
  • 2 1⁄3 cup all purpose flour
  • 1 1⁄3 cup sugar
  • 1 1⁄4 teaspoon baking powder
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1 tbsp. ground turmeric
  • 1⁄4 tsp. cinnamon
  • 1⁄4 tsp. nutmeg
  • 2⁄3 cup butter
  • 2⁄3 cups fully ripened mashed bananas

 

ICING:

  • 2 cups powdered sugar
  • 3 tbsp. cup fresh orange juice
  • 1⁄2 tsp. orange zest
  • 1 tbsp. butter, melted

 

DIRECTIONS:

  1. Pre-heat oven to 350 degrees. Add yogurt and lemon juice to milk. Cream sugar and butter in a mixer. Add bananas, eggs and milk to mixture. Add baking powder, baking soda, salt, turmeric, cinnamon and nutmeg to flour. Slowly add this mixture to the ingredients in the mixer until all dry ingredients are incorporated. Beat vigorously for two minutes. Bake in a greased bundt pan for 35 minutes or until a toothpick or skewer comes out clean.
  2. Whisk ingredients for icing in a mixing bowl and top cake.
