Shake up your lunch routine with this sweet and savoury sandwich. Easy to make and absolutely delicious, it’s sure to have your mouth watering!
Serves 4
Pulled Pork:
- 1 tsp chili powder
- 2 tbsp brown sugar
- 2/3 cup hickory BBQ sauce
- 2/3 cup applesauce
- 1/2 tsp ground pepper
- 1 (3lb) pork loin
- 4 burger buns or hotdog buns
Directions:
- Mix all sauce ingredients (everything but the pork) together in a bowl.
- Put pork loin and sauce in slow cooker.
- Cook 6-8 hours, or until tender, on low heat.
- Break apart pork with a fork.
- Turn off the slow cooker and let the pork loin sit for 10 minutes uncovered.
Zucchini Slaw:
- 1 cup zucchini, shredded
- 1 small jalapeno, seeded and minced
- 1 small mango, chopped
- 3 tbsp mayo
- 2 tbsp olive oil
- 1 tbsp cider vinegar
- 1/2 tsp garlic salt
Directions:
- Combine all ingredients in a small bowl.
- Toast buns and generously top with pulled pork and zucchini slaw.
