Brown Rice and Sprouted Green Lentil Salad

FOR THE RICE

Ingredients:

  • 1 cup (240 ml) brown rice
  • 2 cups (480 ml) vegetable stock
  • 2 cups (480 ml) sprouted green lentils –  try Central Roast Green Sprouted Green Lentils
  • 1 cup (240) blanched broccoli hearts
  • (the stalks of broccoli trimmed and diced)
  • 1 cup (240 ml) cherry tomatoes cut in half
  • 1/2 cup (118 ml) dried goji berries or dried cranberries

FOR THE SALAD

Ingredients:

  • 1. Bring vegetable stock to a boil and add rice. Reduce heat to low, and simmer for 20 minutes or until cooked. Allow to cool.
  • 2. Add broccoli hearts and sprouted lentils.
  • 3. Mix in dressing and let sit for a couple of hours to allow fl avours to develop.

FOR THE DRESSING

Ingredients:

  • 1 bunch fresh basil
  • 1 large avocado
  • 2 jalapeño peppers
  • 1/3 cup (80 ml) white wine
  • vinegar
  • 3 tablespoons (45 ml) lime juice
  • 2 cloves of garlic, crushed
  • 1/3 cup (80 ml) olive oil

Put all ingredients into a food processor or blender and process until smooth.
This dish is best served at room temperature.
