Brown Rice and Sprouted Green Lentil Salad
FOR THE RICE
Ingredients:
- 1 cup (240 ml) brown rice
- 2 cups (480 ml) vegetable stock
- 2 cups (480 ml) sprouted green lentils – try Central Roast Green Sprouted Green Lentils
- 1 cup (240) blanched broccoli hearts
- (the stalks of broccoli trimmed and diced)
- 1 cup (240 ml) cherry tomatoes cut in half
- 1/2 cup (118 ml) dried goji berries or dried cranberries
FOR THE SALAD
Ingredients:
- 1. Bring vegetable stock to a boil and add rice. Reduce heat to low, and simmer for 20 minutes or until cooked. Allow to cool.
- 2. Add broccoli hearts and sprouted lentils.
- 3. Mix in dressing and let sit for a couple of hours to allow fl avours to develop.
FOR THE DRESSING
Ingredients:
- 1 bunch fresh basil
- 1 large avocado
- 2 jalapeño peppers
- 1/3 cup (80 ml) white wine
- vinegar
- 3 tablespoons (45 ml) lime juice
- 2 cloves of garlic, crushed
- 1/3 cup (80 ml) olive oil
Put all ingredients into a food processor or blender and process until smooth.
This dish is best served at room temperature.
