Ingredients (Serves 2):
2 cups cauliflower rice
1 egg
1/4 cup grated Parmesan (or nutritional yeast for a dairy-free option)
1/4 tsp garlic powder
1/2 cup cherry tomatoes, halved
1/4 cup black olives, sliced
1/4 cup crumbled feta cheese
A handful of fresh arugula
1 tsp olive oil
1/2 tsp dried oregano

Instructions:
Make the Crust:

Preheat the oven to 400°F (200°C).
Steam cauliflower rice for 5 minutes, then transfer it to a clean towel and squeeze out excess water.
Mix the cauliflower with the egg, Parmesan, and garlic powder. Press the mixture onto a parchment-lined baking sheet, shaping it into a thin crust.
Bake for 15-20 minutes or until golden brown.
Add the Toppings:

Spread cherry tomatoes, olives, and feta over the baked crust. Sprinkle oregano on top.
Return to the oven and bake for another 10 minutes.
Finish and Serve:

Remove from the oven, drizzle with olive oil, and top with fresh arugula.
