After an especially long day, a plate of your favourite comfort food is the only way to lift your spirits. For a lot of us, a gooey, creamy batch of macaroni and cheese instantly brings us back to our childhood and soothes our souls. Here’s how to spice up a classic dish with the help of Weetabix!
Weetabix Mac and Cheese
Ingredients:
600g Macaroni (regular, whole wheat, or gluten free will work)
3 cups 18% cream
1 cup shredded Gruyere
1 cup shredded cheddar
1 cup shredded pecorino
Salt and pepper to taste
Crust:
2 cups Weetabix
3 tbsp garlic butter
Directions:
Add cream and shredded cheese to a nonstick saucepan, stirring constantly until well combined. Add salt and pepper to taste and keep well heated, reducing it until the sauce is thick enough to stay on a spatula. Cook pasta, combine well with sauce, and spoon into ramekins. Next, melt the garlic butter, shred the Weetabix, combine well and spoon onto the ramekins. Place each ramekin under a broiler on high until the Weetabix crust is browned.
