
Crab and Avocado Salad
Serves 3 | Prep Time: 20 minutes, Cook Time: 10 minutes
Ingredients:
- 3 cups of crab meat, available at most grocers
- canned or fresh
- 4 avocados
- ¼ cup green and red pepper blend, finely chopped
- ¼ clove garlic, minced
- ½ cup desired greens
- 1 tbsp olive oil
- Mayonnaise as desired
- Limejuice, freshly squeezed if desired
Preparation:
- Combine crab, peppers and garlic and blend together (for example, like you would a tuna salad), adding mayonnaise for desired creamy consistency.
- Peel and pit avocados. Iin a large bowl, add olive oil and gently blend together by hand for desired consistency, adding in limejuice to taste.
