Ingredients:
Balls:
10 oz Chevre cheese
12 raspberries
3 eggs, whisked
2 cups Alpen Dark Chocolate cereal, ground
Paint:
1 cup balsamic vinegar
3 tbsp raspberry jam
Instructions:
Grind Alpen cereal in an emersion blender, set aside. Whisk eggs and set aside in a separate bowl. Divide chevre into 12 patties and place a raspberry in the centre of each before folding them over and rolling them into a ball. Then, coat the balls in egg wash with one hand and roll into Alpen mixture using a dry hand. Place on parchment paper and chill until cooking.
Then, set your deep fryer to 420F and place balls into the fryer a few at a time. Allow them to brown (approximately 2 minutes), remove, and let dry on paper towels.
To make the paint, add balsamic and jam to a nonstick pan. Whisk and boil for one minute before reducing heat to medium low. Allow the mixture to reduce by half (this will take approximately ten minutes). Use a non-silicone basting brush to paint the sauce onto a plate, and then place one ball on top of it.
