Ground Turkey Meatballs

FOR GROUND TURKEY MEATBALLS

Ingredients:

  • 3 cups (720 ml) chopped onions
  • 2 teaspoons (10 ml) fresh thyme leaves
  • 1/4 cup (60 ml) Worcestershire sauce
  • 1 cup (240 ml) chicken stock
  • 1/2 small can tomato paste
  • 4 cloves garlic, chopped
  • 5 pounds (2.26 kg) ground turkey breast

Preparation:

  1. Sautée onions in some olive oil until tender.
  2. Add thyme and garlic. Then add chicken s stock, tomato paste and Worcestershire sauce. Cook until reduced to a thick paste.
  3. Allow paste to cool, then add to ground turkey.
  4. Using a spoon or small ice cream scoop, place balls on parchment paper-lined cookie sheet and cook for 15 —20 minutes in a 350°F (175°C) degree oven.

FOR ZUCCHINI NOODLES

  • Raw zucchini
  • Process with a vegetable spiraler or mandolin into thin
  • long ribbons.

FOR ROASTED CHERRY TOMATO SAUCE

Ingredients:

  • 4 10-ounce (.28 kg) packs cherry tomatoes
  • 1 large onion, chopped
  • 2 cloves garlic, chopped
  • 1 tablespoon (15 ml) fresh thyme leaves
  • 1 tablespoon (15 ml) herbs de Provence
  • 2 tablespoons (30 ml) olive oil
  • 1 teaspoon (5 ml) salt
  • 1 teaspoon (5 ml) pepper

Preparation:

  1. Toss all ingredients together in a shallow baking pan and roast for 25 —30 minutes in a 300°F degree (148°C) oven.
  2. Using an immersion blender or a food processor, purée and serve.
