Ground Turkey Meatballs
FOR GROUND TURKEY MEATBALLS
Ingredients:
- 3 cups (720 ml) chopped onions
- 2 teaspoons (10 ml) fresh thyme leaves
- 1/4 cup (60 ml) Worcestershire sauce
- 1 cup (240 ml) chicken stock
- 1/2 small can tomato paste
- 4 cloves garlic, chopped
- 5 pounds (2.26 kg) ground turkey breast
Preparation:
- Sautée onions in some olive oil until tender.
- Add thyme and garlic. Then add chicken s stock, tomato paste and Worcestershire sauce. Cook until reduced to a thick paste.
- Allow paste to cool, then add to ground turkey.
- Using a spoon or small ice cream scoop, place balls on parchment paper-lined cookie sheet and cook for 15 —20 minutes in a 350°F (175°C) degree oven.
FOR ZUCCHINI NOODLES
- Raw zucchini
- Process with a vegetable spiraler or mandolin into thin
- long ribbons.
FOR ROASTED CHERRY TOMATO SAUCE
Ingredients:
- 4 10-ounce (.28 kg) packs cherry tomatoes
- 1 large onion, chopped
- 2 cloves garlic, chopped
- 1 tablespoon (15 ml) fresh thyme leaves
- 1 tablespoon (15 ml) herbs de Provence
- 2 tablespoons (30 ml) olive oil
- 1 teaspoon (5 ml) salt
- 1 teaspoon (5 ml) pepper
Preparation:
- Toss all ingredients together in a shallow baking pan and roast for 25 —30 minutes in a 300°F degree (148°C) oven.
- Using an immersion blender or a food processor, purée and serve.
