Lamb Burgers with Mango Relish

 

Makes four large burgers

Lamb burgers

  • 420 g (1/3 C) bread crumbs
  • 1 red onion, finely chopped
  • 60 ml (¼ C) fresh mint chopped
  • Salt and pepper
  • 2 cloves garlic
  • 680 g (1.5 lbs) ground lamb

Relish

  • 30 ml (2 tbsp) olive oil
  • 1 Mango
  • 30 ml (2 tbsp) chopped mint
  • ½ white onion, chopped
  • Splash chili flakes
  • 2 cloves garlic
  • 15 ml (1 tbsp) agave nectar
  • 60 ml (¼ C) water

Relish:

Chop mango, mint and white onion.
Add all ingredients to a small pot and bring to a boil. Reduce heat and let simmer until everything is very soft. Approximately 30 minutes.
Once soft, mash with fork or masher until becomes the fruit is broken to small pieces. A few larger pieces of fruit are OK.

Lamb burgers:

Mix all ingredients together and form patties (makes 4 large patties). Grill to desired doneness and serve with relish.
