Mediterranean Veggie Burger

Kick your veggie burgers up a notch with a delicious helping of Mediterranean vegetables. Try this recipe out on #MeatlessMondays, or try it out at your next family dinner to spice things up a bit.

Serves 4

Ingredients:

  • 4 Hilary’s Eat Well World’s Best Veggie Burgers
  • 1 eggplant, thinly sliced
  • 1 zucchini, cut into strips
  • 1 onion, sliced
  • Romaine lettuce
  • 4 burger buns
  • Crumbled feta cheese
  • 2 tbsp + 1 tsp olive oil
  • Salt, to taste

Directions:

  1. Salt eggplant and zucchini slices and coat with 2 tbsp olive oil.
  2. Heat a small pan over medium heat. Add eggplant slices, cover pan, and cook until tender and golden brown on both sides. When eggplant is almost done cooking, add zucchini to the mix and cook until tender.
  3. Heat a separate skillet over medium heat and add 1 tsp olive oil. Cook frozen Hilary’s patties for 3 minutes on each side.
  4. To assemble burgers, spread crumbled feta cheese on your buns and place Hilary’s patties on top. Add zucchini and eggplant slices, and top with romaine lettuce and onion as desired.
