
Mixed Green Salad with Beet
FOR THE SALAD
Ingredients:
- 2 beets grated
- 2 inch (5 cm) piece ginger, sliced
- 1 bunch dill
- 2-pound (.90 kg) piece fresh salmon
- fi llet
- 2 pounds (.90 kg) kosher salt
- 1 bunch assorted mixed greens
Preparation:
- In a shallow baking pan, put a bed of salt.
- Place salmon on top of bed of salt, skin side down.
- Cover salmon with sliced ginger and chopped dill, then cover with grated beets.
- Completely cover salmon with remaining salt. Cover and refrigerate for two days.
- Remove from fridge and rinse to remove salt.
- Using sharp knife, cut into thin slices.
- Toss salmon, g inger, dill and beets with mixed greens.
