Mixed Green Salad with Beet

FOR THE SALAD

Ingredients:

  • 2 beets grated
  • 2 inch (5 cm) piece ginger, sliced
  • 1 bunch dill
  • 2-pound (.90 kg) piece fresh salmon
  • fi llet
  • 2 pounds (.90 kg) kosher salt
  • 1 bunch assorted mixed greens

Preparation:

  1. In a shallow baking pan, put a bed of salt.
  2. Place salmon on top of bed of salt, skin side down.
  3. Cover salmon with sliced ginger and chopped dill, then cover with grated beets.
  4. Completely cover salmon with remaining salt. Cover and refrigerate for two days.
  5. Remove from fridge and rinse to remove salt.
  6. Using sharp knife, cut into thin slices.
  7. Toss salmon, g inger, dill and beets with mixed greens.
