 Monk Fruit Vanilla Panna Cotta

Ingredients:

  • 2 cups heavy cream (or coconut cream for dairy-free)
  • ¼ cup monk fruit sweetener
  • 1 tsp vanilla extract
  • 1 ½ tsp unflavored gelatin
  • 2 tbsp water
  • Fresh berries for topping

Instructions:

  1. Sprinkle gelatin over 2 tablespoons of water in a small bowl and let bloom for 5 minutes.
  2. In a saucepan, heat cream and monk fruit sweetener over medium heat until it starts to steam (do not boil).
