Mushroom and Goat Cheese Croutons

FOR 4 TO 6 PEOPLE

Ingredients

  • 1 country loaf
  • 35 ml (3 tbsp) of extra virgin olive oil
  • 1 clove of garlic cut in 2
  • 195 g (7 oz) of chopped Portobello mushrooms
  • Lemon juice from 1 lemon
  • 55 g (2 oz) of crumbled goat cheese
  • 30 ml (2 tbsp) of finely chopped Italian parsley
  • Salt and pepper to taste

Preparation

  1. Cut the country loaf into slices 1 cm thick.
  2. Spread olive oil on the slices and grill them in the oven until they are golden brown on each side.
  3. Rub the half cloves of garlic on the bread. Set aside.
  4. Heat the olive oil in a pan. Sauté the mushrooms until they are tender.
  5. Put the mushrooms in a bowl. Add the lemon juice, goat cheese and parsley. Season with salt and pepper and spread on the croutons.
