Mushroom and Goat Cheese Croutons
FOR 4 TO 6 PEOPLE
Ingredients
- 1 country loaf
- 35 ml (3 tbsp) of extra virgin olive oil
- 1 clove of garlic cut in 2
- 195 g (7 oz) of chopped Portobello mushrooms
- Lemon juice from 1 lemon
- 55 g (2 oz) of crumbled goat cheese
- 30 ml (2 tbsp) of finely chopped Italian parsley
- Salt and pepper to taste
Preparation
- Cut the country loaf into slices 1 cm thick.
- Spread olive oil on the slices and grill them in the oven until they are golden brown on each side.
- Rub the half cloves of garlic on the bread. Set aside.
- Heat the olive oil in a pan. Sauté the mushrooms until they are tender.
- Put the mushrooms in a bowl. Add the lemon juice, goat cheese and parsley. Season with salt and pepper and spread on the croutons.
