Penne with Roasted Peppers and Mascarpone
FOR 2 PEOPLE
Ingredients
- 30 ml (2 tbsp) of extra virgin olive oil
- 55 g (2 oz) of diced smoked pancetta or bacon
- 2 chopped scallions
- 1 yellow pepper, grilled and cut in strips
- 1 red pepper, grilled and cut in strips
- 3 leaves of basil, cut with scissors
- 30 ml (2 tbsp) of mascarpone
- Salt to taste
- 225 g (1/2 lb) of penne (or other short pasta of your choice)
- 30 ml (2 tbsp) of grated parmigianoreggiano
Preparation
- Heat the oil in a skillet.
- Sauté the pancetta until it is almost crunchy. Add the scallions.
- Mix in the peppers, basil and mascarpone. Let cook for 2 or 3 minutes. Salt to taste.
- Cook pasta in salted water until the pasta is al dente.
- Mix the pasta in with the sauce, sprinkle with parmesan and serve.
