Penne with Roasted Peppers and Mascarpone

FOR 2 PEOPLE

Ingredients

  • 30 ml (2 tbsp) of extra virgin olive oil
  • 55 g (2 oz) of diced smoked pancetta or bacon
  • 2 chopped scallions
  • 1 yellow pepper, grilled and cut in strips
  • 1 red pepper, grilled and cut in strips
  • 3 leaves of basil, cut with scissors
  • 30 ml (2 tbsp) of mascarpone
  • Salt to taste
  • 225 g (1/2 lb) of penne (or other short pasta of your choice)
  • 30 ml (2 tbsp) of grated parmigianoreggiano

Preparation

  1. Heat the oil in a skillet.
  2. Sauté the pancetta until it is almost crunchy. Add the scallions.
  3. Mix in the peppers, basil and mascarpone. Let cook for 2 or 3 minutes. Salt to taste.
  4. Cook pasta in salted water until the pasta is al dente.
  5. Mix the pasta in with the sauce, sprinkle with parmesan and serve.
