Fall recipes are a chance to get playful with colour, and new flavours you never thought try during the summer months. Make and serve this fruity dessert to complete those comforting family dinners.
½ cup (1 stick) unsalted butter, room temp
⅓ cup sugar
1 egg
1 tbsp sour cream
Pinch of salt
1 tsp lemon zest
⅓ cup flour
1 tsp baking powder
2 cups plums, pitted and sliced into thin wedges
TOPPING:
6 tbsp butter, room temperature
5 tbsp flour
5 tbsp sugar
½ tsp cinnamon
Preheat oven to 375°F
Cream together butter and sugar in a large mixing bowl until fluffy.
Add egg and vanilla, beating to incorporate.
Add flour, baking powder and lemon zest and mix well.
Grease a round 8″ baking pan and spread batter evenly. Arrange plum wedges over batter.
Beat butter and sugar until creamy.
Add in flour and cinnamon, mix well.
Using a teaspoon or your fingers, drop in clumps over plum wedges.
Bake for about 35-40 minutes, until the topping is golden.
Cool slightly before serving.
Serve with ice cream or crème fraiche.
