½ cup (125ml) cashews
1 mandarin orange, peeled and sliced
1 pomegranate, seeded
2 cups (500ml) frisée or other salad greens
¼ cup (60ml) feta cheese
¼ cup (60ml) blue cheese dressing
1. Mix the nuts, orange, pomegranate and salad greens in a medium bowl. Sprinkle with the feta and dressing to serve.
