Roasted Beef Strip Loin with Red Wine Sauce
Ingredients:
- 4, 6 ½ ounce (180 g) strip loin steaks
- 2 cups (475 ml) rich carrot purée
- 1 cup (240 ml) red wine sauce
- 2 shallots minced
- 1 cup (240 ml) red wine
- 2 cups (475 ml) veal stock
- 1 bay leaf
- 1 sprig thyme
- salt and pepper
Preparation:
- Start with the sauce, simmer shallots over medium heat for about 3 minutes
- Add bay leaf, thyme and red wine, and reduce wine to ¼ cup.
- Add veal stock and reduce all of this to 1 cup. Season with salt and pepper.
FOR THE STEAKS
- Season with salt and pepper.
- In a pan, over medium-high heat, sear beef on all sides for about 3 minutes.
- For a nice medium rare, put into oven for 5 minutes.
