Roasted Beef Strip Loin with Red Wine Sauce

Ingredients:

  • 4, 6 ½ ounce (180 g) strip loin steaks
  • 2 cups (475 ml) rich carrot purée
  • 1 cup (240 ml) red wine sauce
  • 2 shallots minced
  • 1 cup (240 ml) red wine
  • 2 cups (475 ml) veal stock
  • 1 bay leaf
  • 1 sprig thyme
  • salt and pepper

Preparation:

  1. Start with the sauce, simmer shallots over medium heat for about 3 minutes
  2. Add bay leaf, thyme and red wine, and reduce wine to ¼ cup.
  3. Add veal stock and reduce all of this to 1 cup. Season with salt and pepper.

FOR THE STEAKS

  1. Season with salt and pepper.
  2. In a pan, over medium-high heat, sear beef on all sides for about 3 minutes.
  3. For a nice medium rare, put into oven for 5 minutes.
