1 apple, peeled and sliced
1 pineapple, peeled and sliced
2 tbsp (30ml) cinnamon
½ cup (125ml) brown sugar
Pinch of salt
Pinch of nutmeg
½ lb (250g) grapes
1 tsp (5ml) olive oil
2 quails, prepared
1. Preheat the oven to 375°F (190°C). Place the apple and pineapple in a mixing bowl. Stir in the cinnamon, sugar, salt, nutmeg and grapes.
2. Put the mixture in a non-stick shallow pan and bake, covered, for 45 minutes. Stir at least twice while cooking.
3.In a large pan, add the olive oil and quail and let cook on each side until golden brown. Add fruit mixture and let simmer a few minutes, stirring often. Serve with green vegetables or as you prefer. Chef’s note: Quail is available fresh or frozen; make sure it is cooked to an internal temperature of 145°F (62°C). You may also roast in the oven at 350°F (180°C) for 45 minutes or until the internal temperature reaches 180°F (82.2°C).
