Ingredients:
- 2 large sweet potatoes
- 1 cup black beans, cooked (120 mg magnesium)
- 1 cup cooked spinach (157 mg magnesium)
- 1 avocado, diced (58 mg magnesium)
- 1 tablespoon olive oil
- 1 garlic clove, minced
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions:
- Preheat oven to 400°F. Poke holes in the sweet potatoes and bake for 40–50 minutes until tender.
- Heat olive oil in a pan, sauté garlic, then add cooked spinach and black beans. Season with cumin, salt, and pepper.
- Slice the baked sweet potatoes open, fluff the insides, and stuff them with the spinach and black bean mixture.
- Top with diced avocado and serve warm.
