Spinach and Black Bean Stuffed Sweet Potatoes

Ingredients:

  • 2 large sweet potatoes
  • 1 cup black beans, cooked (120 mg magnesium)
  • 1 cup cooked spinach (157 mg magnesium)
  • 1 avocado, diced (58 mg magnesium)
  • 1 tablespoon olive oil
  • 1 garlic clove, minced
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions:

  1. Preheat oven to 400°F. Poke holes in the sweet potatoes and bake for 40–50 minutes until tender.
  2. Heat olive oil in a pan, sauté garlic, then add cooked spinach and black beans. Season with cumin, salt, and pepper.
  3. Slice the baked sweet potatoes open, fluff the insides, and stuff them with the spinach and black bean mixture.
  4. Top with diced avocado and serve warm.
