Cinnamon Roasted Apple with Herb Crusted Goat Cheese
Serves 2 | Prep Time: 20 minutes, Cook Time: 40 minutes
- 1 apple, peeled and sliced
- 2 tbsp (30ml) cinnamon
- ½ cup (125ml) brown sugar
- 1 tbsp finely chopped thyme
- 1 tbsp finely chopped marjoram
- 1 tbsp dried grated lemon peel
- 2 sage leaves, finely chopped
- 2 basil leaves, finely chopped
- 1 cup fresh goat cheese
- 1 cup spring mix salad, or desired greens
- Pinch of salt
- Pinch of nutmeg
- Preheat the oven to 375°F (190°C). Place apple slices in a mixing bowl. Stir in the cinnamon, sugar, salt, nutmeg.
- Put the mixture in a non-stick shallow pan and bake covered for 45 minutes. Stir at least twice while cooking.
- Combine herbs on a large plate. Roll goat cheese into balls. Roll in mixed herbs until completely coated, flatten if desired.
