Cinnamon Roasted Apple with Herb Crusted Goat Cheese

 

Serves 2 | Prep Time: 20 minutes, Cook Time: 40 minutes

  • 1 apple, peeled and sliced
  • 2 tbsp (30ml) cinnamon
  • ½ cup (125ml) brown sugar
  • 1 tbsp finely chopped thyme
  • 1 tbsp finely chopped marjoram
  • 1 tbsp dried grated lemon peel
  • 2 sage leaves, finely chopped
  • 2 basil leaves, finely chopped
  • 1 cup fresh goat cheese
  • 1 cup spring mix salad, or desired greens
  • Pinch of salt
  • Pinch of nutmeg
  1. Preheat the oven to 375°F (190°C). Place apple slices in a mixing bowl. Stir in the cinnamon, sugar, salt, nutmeg.
  2. Put the mixture in a non-stick shallow pan and bake covered for 45 minutes. Stir at least twice while cooking.
  3. Combine herbs on a large plate. Roll goat cheese into balls. Roll in mixed herbs until completely coated, flatten if desired.
