
Melon Soup
Makes 4 to 6 servings
Ingredients:
- 2½ kg (6 pounds) mixed melons
- 470 ml (2 cups) orange juice
- 30 ml (2 tablespoons) fresh lime juice
- 1 sprig fresh dill
Preparation:
- Slice melons in half and scoop out seeds, then cut fruit out of its rind and place in a food processor or blender.
- Add the orange and lime juice and puree until smooth.
- Garnish with fresh dill.
