Raw Coconut Goji Macaroons
Ingredients:
- 2 cups (480 ml) raw cashews, soaked in water for 30 minutes
- 1/2 cup (120 ml) hemp seeds
- 1 cup (240 ml) goji berries, soaked in warm water for 10 minutes
- 1/2 cup (120 ml) coconut oil, melted 3-4 tablespoons (45 60 ml) coconut fl our
- 1/3 cup (78 ml) coconut nectar or raw agave nectar
- 1 teaspoon (5 ml) sea salt or Himalayan salt
- 1/2 cup (120 ml) shredded coconut
- (additional 1 cup (240 ml) for rolling)
Directions:
- Drain cashews and add to a food processor fitted with an S blade. Blend until smooth.
- To melt coconut oil, place in a small bowl and put the bowl into a larger bowl fi lled with hot water. The oil will melt in a minute or two.
- Add the melted coconut oil to the food processor, and blend until smooth.
- Add hemp seeds, sea salt and coconut nectar, and blend until combined.
- Add coconut fl our 1 tablespoon (15 ml) at a time until desired consistency is reached; should be like a bread dough texture.
- Transfer mixture to a large bowl and fold in goji berries. Make sure to fully drain the water so gojis will retain their shape.
- Form the mixture into balls about the size of a walnut, and roll in shredded coconut. Chill in refrigerator for 30 minutes for a firmer texture.
* Tip: It helps to rub a little coconut oil on your hands while forming the balls, to prevent sticking
