Raw Coconut Goji Macaroons

Ingredients:

  • 2 cups (480 ml) raw cashews, soaked in water for 30 minutes
  • 1/2 cup (120 ml) hemp seeds
  • 1 cup (240 ml) goji berries, soaked in warm water for 10 minutes
  • 1/2 cup (120 ml) coconut oil, melted 3-4 tablespoons (45 60 ml) coconut fl our
  • 1/3 cup (78 ml) coconut nectar or raw agave nectar
  • 1 teaspoon (5 ml) sea salt or Himalayan salt
  • 1/2 cup (120 ml) shredded coconut
  • (additional 1 cup (240 ml) for rolling)

Directions:

  1. Drain cashews and add to a food processor fitted with an S blade. Blend until smooth.
  2. To melt coconut oil, place in a small bowl and put the bowl into a larger bowl fi lled with hot water. The oil will melt in a minute or two.
  3. Add the melted coconut oil to the food processor, and blend until smooth.
  4. Add hemp seeds, sea salt and coconut nectar, and blend until combined.
  5. Add coconut fl our 1 tablespoon (15 ml) at a time until desired consistency is reached; should be like a bread dough texture.
  6. Transfer mixture to a large bowl and fold in goji berries. Make sure to fully drain the water so gojis will retain their shape.
  7. Form the mixture into balls about the size of a walnut, and roll in shredded coconut. Chill in refrigerator for 30 minutes for a firmer texture.

* Tip: It helps to rub a little coconut oil on your hands while forming the balls, to prevent sticking
