Ingredients

For the soufflé bites
• 1 large leek (white portion only)
• 1 tbsp olive oil
• 40 g butter
• 40 g flour
• 300 mL milk
• 120 g aged Gruyère, finely grated
• ⅛ tsp cayenne
• Salt to taste
• 4 eggs, separated

For the Parmesan spoons
• 200 g finely grated parmesan

Method

Char the leek
Split the leek lengthwise, wash well, and pat dry. Brush lightly with olive oil, then char under a broiler or with a kitchen torch until smoky and blistered. Mince finely.

Build the base
In a saucepan, melt butter and whisk in flour to form a roux. Slowly add milk, whisking until a thick, silky béchamel forms. Remove from heat and stir in Gruyère, minced leek, cayenne, and salt. Let cool slightly until warm but not hot.

Make the soufflé
Whisk egg yolks into the warm base. In a separate bowl, whip egg whites to soft peaks. Fold gently into the mixture, keeping as much air as possible. Spoon into greased mini-muffin tins and bake at 200°C for 10–12 minutes until puffed and golden.

Shape the Parmesan spoons
Bake 10–12 cm rounds of grated parmesan at 190°C until just molten and lace-like. Working quickly, drape each over a spoon mould or the underside of a spoon to create an elegant edible vessel.

Serve
Nestle the warm soufflé bites into the Parmesan spoons and serve immediately while they’re tender and breathtaking.
